aubergine curry

serve 2, df, ve, gf 

 

1 medium onion, chopped

1 medium aubergine, thickly sliced

2 tbsp olive oil

 2 cloves garlic

1 tbsp freshly chopped ginger

1 tbsp mild curry powder

350g tomatoes, chopped OR 1 tin chopped tomatoes

1 tsp garam masala

fresh coriander

steamed rice or flat bread to serve

optional: yoghurt (df if needed) to serve

method

cook the onion and aubergine in olive oil in a large pan until soft

add the garlic and ginger to the pan, stir for 2 minutes

add the curry powder, stir briefly then add the tomatoes

leave to simmer for 25 minutes

make up the rice or warm the flat bread

season with salt, pepper and add the garam masala once cooked

finish with the coriander and yoghurt
