over-night oats

 

serves 2, df option, gf option

1 eating apple, coarsely grated

90 g jumbo porridge oats (gluten-free option)

2 tablespoon of chia seeds

150ml plant based milk (can do half water / half milk)

squeeze of lemon

toppings:

banana, berries, pomegranate, grapes, chia seeds, desiccated coconut, sultanas, nuts, honey

method

put the grated apple in a bowl and add the oats, chia seeds, lemon and milk

stir well ensuring chia seeds are separated as much as possible

cover and refrigerate over night

spoon the oat mix into two bowls and top with your choice of topping
