date and coconut balls

makes approx 14, ve, gf, df

20g desiccated coconut

250g pitted dates - medjool are fantastic
1 tablespoon coconut oil
1/2 teaspoon ground cardamon seeds (or finely ground seeds from 6 pods)

50g chopped mixed nuts 

method

 

tip some desiccated coconut onto a plate in an even layer, and put aside for rolling the balls with at the end

put the dates, coconut oil, cardamon and 1 tablespoon desiccated coconut into a food processor and blend until you have dough consistency

add the chopped nuts to the bowl and knead into the date mixture until well mixed

if it is a bit  sticky, rub some coconut oil on to your hands

roll into balls and then roll in the desiccated coconut 

keep refrigerate for up to one week
