banana bread on a frosty morning


It wouldn't exactly be a nutrition and wellness blog without a banana bread recipe. It's something I always experiment with, and encourage you to do so too. This one is refined sugar free, gluten free, and vegan. Made on a Sunday morning, after returning from a slow walk in the frost. I couldn't think of anything better to do other than to bake this banana bread and sip a herbal tea. It's life simple little pleasures that make it beautiful.

300g Buckwheat or gluten free flour mix

4 mashed ripe bananas

1/2 tsp ground cinnamon

1/4 tsp sea salt

1 tbsp chia seeds

120ml almond milk (or another plant-based milk)

2 tsp baking powder

1 tsp baking soda

50g raisins

30g walnuts

Preheat oven to 180'C (fan 160'c/gas mark 4)

mix the flour, baking powder, baking soda, cinnamon and seasalt

in separate bowl mash the bananas then add the milk and vanilla

stir in the raisins and walnuts then add to the flour mix

transfer mixture to a lined loaf tin and bake for 40 mins or until golden brown and knife comes out clean!


serve warm and with cream (plant-based if needed) or some butter
