drying herbs - sage, salvia officinalis


I am lucky to say I have herbs growing in abundance in my garden. So much so I have taken to drying them so I can store them ready for teas.


Sage, salvia officinalis, is a truly medicinal herb, and most well known for it's use in a sage and onion stuffing! It is a shrub that grows heavily scented leaves which are used in herbal medicine. Sage has anti-inflammatory effects, is used for memory and cognition, very useful during the menopause with hot flushes, and more.


Here are some simple instructions for how to dry herbs at home ready to be stored for teas or in cooking.



Firstly, harvest the leaves when ready, sage is generally ready in may and june. Cut off the leaves, discard any that are too dry or have signs of pest infestation. Wash the leaves very well, then leave to dry on some paper towel ensuring the excess water has been soaked up.



Turn your oven on to its lowest setting.

Place the leaves spread out on a baking sheet and bake until the leaves are crisp and crumble in your hand. This takes approximately 1.5-2hrs.


You can then store the leaves in an air tight container for up to one year.
