scrambled tofu

 

serves 2, df, gf, ve

100g firm tofu, chopped into little cubes

20g sliced red onion

40g chopped red pepper

1 clove garlic, sliced

¼ chilli flakes

1 tbsp chopped fresh parsley 

serve with:

grilled or lightly friend courgette, avocado and spinach (shown in image)

or anything else you fancy, a poached egg, steamed kale or just simply rocket leaves is perfect too

method

gently fry the onion and garlic for 4 minutes

add the red pepper and cook for 2 mintues

add the chilli and tofu then using the edge of a wooden spoon, press down so it falls apart a little

keep stiring and cook until tofu very slightly browns

in the meantime cook your chosen sides and then serve and season with a little salt and pepper
