turmeric spiced eggs

 

serves 1 , df, gf

 

1 teaspoon of coconut or olive oil

20g red onion, finely chopped

2 medium eggs

30ml milk (vegan milk if needed)

1/2 birds eye chilli, finely chopped

1/2 teaspoon ground turmeric

1 teaspoon parsley, chopped

method

heat the oil in a frying pan, add the onion and chilli and cook until soft

whisk together the eggs, milk, parsley and turmeric and add to the frying pan

stir occasionally and serve when ready, adding some fresh parsley on the top

season if desired
